Sherrible Secrets  

 

Sherry is made in a complex process where wine is fortified with brandy and allowed to ferment in a cask. This new wine is then allowed to age. After it ages a portion of it is put in another barrel where previous wine has been allowed to age further. This is continued three to nine times depending upon how fine you want the grade of sherry to be. For cooking uses, you can probably just skip most of the steps and just do it the first time.
